Banana-Nut Muffins:

Ingredients:

  • 1 cup flour
  • 1 tbs. baking powder
  • 1/2 tsp. baking soda
  • 1 cup rolled oats
  • 1/4 tsp. cinnamon
  • 1/4 cup walnuts
  • 1 egg
  • 3/4 cup milk (soy also works well)
  • 2 medium sized bananas

Procedure:

  • preheat oven to 400 c
  • mix dry ingredients in large bowl
  • add everything else to bowl and mix
  • spoon into muffin pan and cook for 20 min.
Yields:
twelve muffins

Note:
if making for guests, be aware of any nut allergies.
